What is Honey?


Composition of honey:

18% Water

35% Glucose (Dextrose)

40% Fructose (Levulose)

4% Other Sugars

3% Other substances

It is the properties of this other 3% which makes honey so special. The English climate is not ideal for honeybees as they cannot forage all the year round. The blend of flowers from our gardens, fields, hedgerows and trees however creates a flavour which is unsurpassable. The foraging honeybees suck nectar from the flowers and carry this back to the hive where it is stored in cells in the wax comb. They fan this with their wings to evaporate some of the water content and when it reaches the desired specific gravity each cell is sealed with a thin wax cap.
