Balti Chicken Chilli Masala

Hot and spicy would be
the best way of describing
this mouth watering balti dish.
The smell of the fresh chillies while they are cooking is simply irresistible!
Preperation time 15-20 minutes cooking time 20 minutes.
Serves 4 - 6

5 Tbsp corn oil
8 large fresh green chillis slit
1/2 tbsp mixed onion seeds and cumin seeds
4 curry leaves
1 tbsp grated fresh root ginger
1 tbsp chilli powder
1 tbsp ground coriander
1 tbsp crushed garlic
1 tbsp salt
2 medium onions, chopped
1/2 lb skinned chicken fillets, cubed
1 tbsp lemon juice
1 tbsp roughly chopped fresh coriander
1 tbsp roughly chopped fresh mint
8-10 cherry tomatoes

1. Heat the oil in a karahi wok or a deep pan. Lower the heat slightly and add the slit green chillis fry until the skin starts to change colour.

2. Add the onion seeds, cumin seeds, curry leaves, ginger, chilli powder, ground coriander, garlic, salt and onions. Fry for a few seconds stirring continuously

3. Add the chicken pieces to the pan stir fry over a medium heat for 7 - 10 minutes or until the chicken is cooked right through. Do not over cook the chicken or it will become tough in texture.

4. Sprinkle on the lemon juice and add the roughl chopped fresh mint and coriander leaves. Dot with the cherry tomatoes and serve straight from the pan.
