Perfect Basmati Boiled Rice

3 pints (1.7 L) Water
2 cups Basmati Rice
1 Teaspoon Salt           (Serves four)
Pour the water into a large pot and bring to the boil.
Put the rice in a bowl and add tap water to cover and take the starch out by simply squeezing the grains gently with your fingers then drain and repeat 3-4 times. Finally leave to stand in water 3-4 minutes.
Add rice and salt to the boiling water turn down the heat and do not boil Simply simmer gently uncovered for 15-20 mins, stir occasionaly. Heat the oven to 170 0/C or 350 0/F drain the rice in a sieve and pour cold water over it 2-3 times to really get that starch out. Drain and get as much water out as possible.
Return rice to empty saucepan and place in the oven for 8-10 mins covered to dry the grains. Serve immediately! Take care when handling hot pot.
